Since 1995, the famous Mesquite Smoked Peppered Beef Tenderloin from Perini Ranch Steakhouse has graced dinner tables and celebrations across the country, bringing the bold, authentic flavors of West Texas straight into your home.
Each tenderloin is individually selected, hand-trimmed, and seasoned with our signature blend of cracked black pepper and herbs. It’s then slow-smoked over mesquite wood, resulting in tender, smoky perfection.
Fully cooked to a perfect medium-rare, our tenderloin is flash frozen and delivered overnight.
Simply thaw, slice, and serve! With no prep and no fuss, it’s a holiday dinner, a special gift, or an impromptu celebration, ready from your freezer.

Beef is shipped FedEx Standard Overnight. You will be asked to schedule a delivery date during checkout. Please schedule delivery at least 3 days prior to serving to allow for any unexpected shipping delays and for thawing time.
If your beef is frozen or cold to the touch and the packaging is sealed and secure, you can either put it in the freezer for up to 1 year, or if you are planning to serve it soon thaw it under refrigeration for at least 24 hours prior to serving.
If your beef arrives thawed or the packaging is open or unsealed, please place the beef in the refrigerator and call (800) 367-1721 or email info@periniranch.com for further instruction.
Preparing Your Tenderloin

Remove from packaging and thaw at room temperature for about 4 hours, or under refrigeration for 24 hours

Slice into 1/4" medallions for hors d'oeuvres (yields 40pcs), no more than 1/2" medallions for entrees (yields 20pcs)

A whole tenderloin should serve approximately 15 as hors d'oeuvres or 8-10 as an entree
